I’ve been loving the cooler weather lately. It’s been a long time coming for us in the Bay Area and it FINALLY feels like winter. This is my favorite time a year for cooking…. soups, stews, and cozy baked goods.
Banana bread is one those super comforting foods that everyone loves. This recipe is lightened up and oh so tasty. It’s light, moist, and very banana-y. Although I’ve never met a banana bread recipe that I didn’t like this is my favorite.
Lightened Up Banana Bread
Makes one loaf
1 cup all purpose flour
1 cup cake flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp kosher salt
1 tsp cinnamon
1/2 cup granulated sugar
1/2 cup light brown sugar
1/4 cup unsalted butter, softened
2 large eggs
3 to 4 very ripe bananas, mashed
1/3 cup lowfat sour cream
1 tsp vanilla paste
Cooking spray
Preheat oven to 350.
In a medium bowl sift together flours, baking soda, baking powder, salt, and cinnamon. Set aside.
In a mixing bowl cream butter until it is light in color and the consistency of mayonnaise. Add in sugars and continue to beat until light and fluffy. Add in eggs, one at a time, until just incorporated. Mix in mashed bananas, sour cream, and vanilla paste. Mix in dry ingredients, one cup at a time, being careful not to over mix.
Coat loaf pan with cooking spray and pour in batter. Leave as is or top with Oat Crumble Streusel or pepitas.
Check the bread after 40 minutes. It make take up to 60 minutes depending on your oven.
