Oh carbs, how I love thee…
Before we went to Hawaii my sister-in-law and I did a 2-week, no/low carb diet. I nearly died. Well, that’s an exaggeration. BUT, I definitely missed carbs that’s for sure. It didn’t help that she lost 5 lbs and I gained 1. I think it was my body’s way of telling me that it NEEDS carbs… Or, at least that’s what I’m going to tell myself.
Baking bread is sort of overwhelming. I typically shy away from it because, honestly, it seems like too much of a chore when you can get an awesome loaf at a bakery for about $4.00.
Enter baker extraordinaire Jim Lahey of Sullivan Street Bakery in New York City. His recipe for no knead bread is, quite frankly, genius. And, SO EASY. Anyone CAN do this. And everyone SHOULD do this.
The recipe is linked here. Simply watch the video and follow the directions. Planning ahead is really the only thing required to make this bread. It takes at least 14 hours from start to finish but your hand on time is less than 5 minutes.
Baking notes:
- I’ve made the recipe with both bread flour and all-purpose flour. I prefer the all-purpose flour.
- If it smells like it’s burning, it probably is. My first loaf got a little toasted on the bottom. I followed the baking instructions exactly but I should have taken it out earlier based on the smell. And feel free to (very carefully) peek at the bottom of the bread to check the status.
Enjoy!
